I think that the WinBoard option -egtFormats "syzygy:PATHNAME" should make the engines aware where they can find the syzygy EGT. (I recall Polyglot does support the standard UCI option for syzygy-bases under this name, but I am not 100% sure.) You can also type syzygy:PATHNAME in the 'EGT Path' field of the Common Engine Options dialog. If a UCI engine uses an option for the syzygy path that is not recognized by Polyglot, it should appear in the Engine Settings dialog, and you can set it from there. (If you want to set it automatically on loading the engine, you can install the engine with the 'extra WinBoard option' -firstOptions "OPTIONNAME=VALUE".)
