winboard /fcp='ChessV_WinBoard "Orthodox Chess"' /fd=ChessV /xreuse

should do it. More fun will be of course:

winboard /fcp='ChessV_WinBoard "Capablanca Chess"' /fd=ChessV /xreuse /variant=capablanca

So the ChessV variant name needs to be double-quoted inside a single-quoted engine command line. I guess WinBoard quoting rules are flexible enough to find other ways to do it as well (e.g. using {} or backslashes). ChessV should be able to make E-division, I think.
